Best Fudgey Pecan Brownies
Best Fudgey Pecan Brownies
1/2 cup (1 stick) butter or
margarine, melted
1 cup sugar
1 tsp vanilla
2 eggs
1/2 cup flour
1/3 cup baking cocoa
1/4 tsp baking powder
1/4 tsp salt
1/2 cup coarsely chopped pecans
Chocolate Frosting (recipe follows)
Pecan halves
Heat the oven to 350 F. Lightly grease an 8 or 9 inch square baking pan. Beat the butter, sugar, and vanilla with a wooden spoon in a large bowl. Add the eggs. Beat well. Stir together the flour, cocoa, baking powder, and salt. Gradually add to the egg mixture. Beat until well blended. Stir in the chopped pecans. Spread in the prepared pan. Bake for 20 to 25 minutes or until the brownies begin to pull away from the sides of the pan. Meanwhile, prepare the Chocolate Pecan Frosting. Spread the warm frosting over the warm brownies. Garnish with pecan halves. Cool completely. Cut into squares.
Makes about 16 brownies
Chocolate Pecan Frosting
1 1/3 cups powdered sugar
2 tbsp baking cocoa
3 tbsp butter or margarine
2 tbsp milk
1/4 tsp vanilla
1/4 cup chopped pecans
Place the powdered sugar and the cocoa in a medium bowl. Heat the butter and the milk in a small saucepan over low heat until the butter is melted. Gradually beat into the cocoa mixture. Beat until smooth. Stir in the vanilla and pecans. Makes about 1 cup of frosting.
