Cocoa Brownies
Cocoa Brownies
1/2 cup flour
1/2 cup unsweetened cocoa
1/4 tsp baking powder
1/4 tsp salt
6 tbsp butter
1 cup sugar
2 large eggs
2 tsp vanilla
1/3 cup mini chocolate chips
Preheat the oven to 350 F. Grease an 8 x 8 inch metal baking pan. On a piece of waxed paper, combine the flour, unsweetened cocoa, baking powder and the salt. In a 3 quart saucepan, melt the butter on low heat. Remove from the heat. Using a spatula, stir in the sugar. Then add the eggs, one at a time. Then add the vanilla. Stir until well blended. Then stir in the flour mixture. Spread the batter into the prepared baking pan. Sprinkle with the chocolate chips. Bake for 18 to 20 minutes or until a toothpick inserted into the brownies 2 inches from the center comes out almost clean. Cool the brownies completely in the pan on a wire rack. This will take about 2 hours. When the brownies are completely cool, cut into squares. Makes about 16 brownies depending on size cut
