Grilled tofu with Chimichurri on the Grill
15 ounces firm tofu
4 slices whole grain bread
chimichurri
1/2 c minced red onion
1/2 c chopped flat leaf parsley
1/2 c extra virgin olive oil
1/4 c sherry vinegar
2 TBS chopped fresh oregano
1 TBS minced garlic
2 tsp coarse salt
1.2 tsp crushed red pepper flakes
pepper to taste
Salad
1 firm avacado
1/2 cucumber cut into rounds
1/4 tsp salt
ground pepper to taste
squeeze of lemon
2 tsp exra virgin olive oil for drizzling
Press tofu dry with paper towle. Cut into 4 pieces. Press Dry again. Make Chinichurri. Reserve 1/2 c and marinate tofu in remaining sauce. Make salad vy combining all infredients and drizzling with olive oil. Grill tofu basting with sauce. Grill tofu 2 to 4 min per side. Serve tofu on bread with chimichurri sauce on top. Serve the salad on the side.
