Zucchini and Walnut Bread
Zucchini and Walnut Bread
3 eggs
2 cups sugar
1 cup oil
2 cups zucchini, grated
2 cups flour
1/4 tsp baking powder
2 tsp baking soda
1 tsp salt
3 tsp cinnamon
1 tsp vanilla
1/2 cup chopped walnuts
Beat together the eggs, sugar, oil, and zucchini in a large mixing bowl. Add the remaining ingredients. Pour into 2 greased and floured 3 3/4 x 2 1/2 inch mini loaf pans. Bake at 350 F for one hour or until a toothpick inserted comes out clean. Makes 2 loaves
