Chocolate-Zucchini Bread

Chocolate-Zucchini Bread
3 eggs
1 cup oil
2 cups sugar
2 tbsp vanilla
2 1/2 cups flour
1 tsp salt
1 1/2 tsp baking soda
2 1/2 tsp baking powder
1/2 cup baking cocoa
2 cups succhini, shredded
1 cup chopped nuts
Blend the eggs, oil, and sugar together in a large mixing bowl. Add the vanilla, flour, salt, baking soda, baking powder, and cocoa. Mix well. Fold in the zucchini and nuts. Spoon into 2 greased 9 x 5 inch loaf pans. Bake at 350 F for one hour. Makes two loaves
