Crisp Lemon Sugar Cookies
Crisp Lemon Sugar Cookies
1/2 cup butter, softened
1/2 cup butter-flavored shortening
1 cup sugar
1 egg
1 tbsp milk
2 tsp lemon extract
1 tsp vanilla
2 1/2 cups flour
3/4 tsp salt
1/2 tsp baking soda
Additional sugar
In a large bowl, cream the butter, shortening, and sugar until light and fluffy. Beat in the egg, milk, and both extracts. Combine the flour, salt, and baking soda. Gradually add to the creamed mixture. Shape into 1 inch balls or drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Flatten with a glass dipped in the additional sugar.
Bake at 400 F for 9-11 minutes or until the edges are lightly browned. Remove to wire racks to cool. Makes about 6 1/2 dozen
