SQUASH HASH BROWNS

1 chopped onion
1 large chopped or grated potato (I use a mandolin. The smaller the cut, the quicker it cooks.)
1 small to medium yellow squash or zucchini

Add onion and potato to pan with a little olive oil and butter. Saute, stirring to coat all with oil and butter. Add squash. Add salt and pepper. Cook until desired tenderness. It will brown like hash browns if you let it set in the pan.

Serve with fried eggs and fresh sliced tomatoes.
