Sucker Cake
Pistachio (or any flavor) Dessert
1/2 cup melted butter
1 1/2 stacks Ritz crackers, crushed (approx. 57 crackers)
2 cups milk
2 small packages of Pistachio instant pudding
1 quart of vanilla ice cream, softened
Cool whip
Heath choc./toffee bits
Combine melted butter and cracker crumbs, press into 9x13 pan. Chill til ready to use. Stir the ice cream until it's easy to work with. Combine milk and pudding mixes, then fold in the ice cream, blending well. Pour over prepared crust. Refrigerate for about half an hour, then spread Cool Whip over top. Sprinkle with toffee bits.
Keep refrigerated. You don't have to freeze it. I've always used the pistachio pudding, but any flavor would work!
