Plum Buckle Empty Plum Buckle

Plum Buckle
Makes: 8 to 10 servings

Ingredients:

1 cup (2 sticks) butter, room temperature
1 cup plus 2 tablespoons sugar (divided)
2 large eggs
1 teaspoon grated lemon peel
1½ cups flour
1 teaspoon baking powder
¼ teaspoon salt
¼ teaspoon ground nutmeg
1/3 cup milk
4 cups sliced unpeeled firm-ripe plums (about 1¼ pounds)
½ teaspoon ground cinnamon

Preparation:
Preheat oven to 325 degrees.
In large bowl, with a mixer on high speed, beat butter and 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition. Beat in lemon peel.
In small bowl, mix flour, baking powder, salt and nutmeg. Stir half the flour mixture into butter mixture, then add milk, followed by remaining flour mixture; stir just until incorporated.
Scrape batter into a buttered and floured 8-inch square glass or ceramic baking pan and spread level. Overlap plum slices in rows or concentric circles over batter. In small bowl, mix remaining 2 tablespoons sugar and the cinnamon; sprinkle evenly over plums.
Bake in preheated oven until a wooden skewer inserted into center comes out clean, 45 to 50 minutes. Serve warm or at room temperature
