Salted Peanut Cookies

1 1/2 cups shortening
1 cup sugar
1 cup packed brown sugar
3 eggs
1 tsp vanilla
3 3/4 cups flour
2 tsp baking soda
1 tsp salt
1 1/2 cups semisweet chocolate chips
1 1/2 cups salted peanuts

In a large bowl, cream the shortening and both sugars until light and fluffy. Add the eggs, one at a time. Beat well after each addition. Beat in the vanilla. Combine the flour, baking soda, and salt. Gradually add to the creamed mixture. Mix well. Stir in the chocolate chips and the peanuts. Drop by tablespoonfuls 2 inches apart onto greased baking sheets. Bake at 350 F for 10-12 minutes or until lightly browned. Remove to wire racks to cool. Makes 10 dozen
