Chocolate Chip Oatmeal Cookies

1 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 tsp vanilla
3 cups quick-cooking oats
1 1/2 cups flour
1 pkg (3.4 ounces) instant vanilla
pudding mix
1 tsp baking soda
1 tsp salt
2 cups (12 ounces) semisweet
chocolate chips
1 cup chopped nuts

In a large mixing bowl, cream the butter and the sugars. Beat in the eggs and the vanilla. Combine the oats, flour, pudding mix, baking soda, and salt. Gradually add to the creamed mixture. Stir in the chocolate chips and the nuts. Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake at 375 F for 10-12 minutes or until lightly browned. Remove to wire racks to cool completely. Makes about 7 dozen
