Double Nut Crunchies
Double Nut Crunchies
1 cup butter-flavored shortening
1 cup chunky peanut butter
1 cup sugar
1 cup packed brown sugar
2 eggs
1 tsp vanilla
2 cups flour
1/2 cup baking cocoa
2 tsp baking soda
Pinch of salt
1 cup coarsely chopped salted cashews
In a large mixing bowl, cream the shortening, peanut butter, and the sugars until light and fluffy. Add the eggs, one at a time. Beat well after each addition. Beat in the vanilla. Combine the flour, cocoa, baking soda, and the salt. Gradually add to the creamed mixture. Mix well. Stir in the cashews. Roll into 1 inch balls. Place 2 inches apart onto ungreased baking sheets. Flatten with a fork dipped in sugar. Bake at 350 F for 8 to 10 minutes or until lightly browned. Remove to wire racks to cool. Makes about 5 dozen
