Watermelon Salsa
Watermelon Salsa
2 C. diced seedless watermelon
3/4 C. finely chopped sweet onion
3/4 C. canned black beans rinsed and drained
2 jalapeno peppers, seeded and chopped
1/4 C. minced fresh cilantro
2 T. brown sugar
1 garlic clove minced
1/2 t. salt
In a small bowl, combine all ingredients. Cover and refrigerate for at least 1 hour. Drain if necessary before serving.
