Quiche for One (uses 5" pie pan)
Quiche for One (uses 5" pie pan)
1/3 c. chopped fresh mushrooms
1 t. butter (will use olive oil next time)
1 egg (can use egg substitute)
3 T 2% milk
1/8 t. pepper
Dash ground nutmeg
1/4 c. shredded Swiss cheese
1 t. real bacon bits (I used real bacon)
1 t. minced chives (I used organic)
In small skillet, sauté mushrooms in butter until softened. In small mixing bowl, beat egg, milk, pepper & nutmeg. Stir in mushrooms, cheese, bacon and chives. Pour into 5" pi plate coated w/nonstick cooking spray. Bake at 350 for 30 min. or until set. Let stand 5 min. before serving.
