QUICHE FOR A CROWD
5 frozen pie crusts
Saute a bunch of onions and fresh or canned mushrooms. Cook 3 boxes frozen spinach according to directions. Drain spinach. Mix 10 eggs and 1 quart half & half. Grate about 1/2 pound Cheddar cheese.
Put onions and mushrooms and then drained spinach in pie shells. Top with grated cheese. Add a pinch each of cayenne pepper and nutmeg to egg mixture and pour into pie shells. Bake at 350 to 375 degrees for 30 or 40 minutes.
