For The Crust:
1 cup flour
1/3 cup butter, softened
1/4 cup confectioners' sugar
For the Topping:
1 cup sugar
2 eggs
2 tbsp flour
2 tbsp lemon juice
1/2 tsp lemon extract
1/2 tsp baking powder
1/4 tsp salt
Confectioners' sugar
Combine the crust ingredients. Pat into an 8 inch square baking pan. Bake at 375 F for 15 minutes. Meanwhile, for the topping, combine the sugar, eggs, flour, lemon juice, extract, baking powder, and salt in a bowl. Mix until frothy. Pour over the crust. Bake at 375 F for 18-22 minutes or until light golden brown. Cool. Dust with confectioners' sugar.
