Tofu Teriyaki Bites
Tofu Teriyaki Bites
(from Vegetarian Times Vegetarian Entertaining)
3/4 C. orange juice
1/2 C. low-sodium or regular soy sauce
1/4 C. Worcestershire sauce
1/4 C. plus 1 Tbsp. brown sugar
1 Tbsp. minced fresh gingerroot
2 Tbsp. Canola oil
1/2 tsp. freshly ground black pepper
1 lb. extra-firm tofu, cut into 3/4" cubes
In a medium mixing bowl, whisk together all of the ingredients except
the tofu.
Add tofu to the marinade, cover and refrigerate for 2 to 4 hours. Stir the
marinade and tofu after 1 hour.
Preheat oven to 375 degrees F. Line a 9x13 baking pan with aluminum
foil. With a slotted spoon or tongs remove tofu from marinade and arrange
single-layer in baking pan. Bake until the tofu is firm and toasty brown, about 20
minutes.
Remove from pan and let cool slightly. Makes 6 appetizer servings.
