Chessar cheese and chili Breakfast Casserole
BREAKFAST CASSEROLE WITH CHEDDAR AND GREEN CHILIS.
•1 lb sausage
•6-8 slices of sourdough French bread
•4 cups (16 oz) grated Cheddar cheese
•6 eggs
•3 cups milk
•1 can (4 oz) of chopped green chilis
•1 tsp salt
•1/2 tsp pepper
1.Fry sausage in a skillet, chopping as it cooks, until all pink is gone. Drain on paper towels.
2.Place the bread slices in the bottom of a 9×13 baking dish.
3.Arrange the cooked sausage over the bread and top with the grated cheese.
4.Beat the eggs, milk, green chilis, salt, and pepper together and pour evenly over the sausage and cheese layer, saturating all the bread.
5.Cover and refrigerate overnight.
6.To serve, preheat oven to 320, uncover breakfast casserole, and bake 80-90 minutes.
Notes
1.This breakfast casserole freezes well for future use. Construct the casserole and cover with plastic wrap and then with foil before placing in the freezer. Before baking, allow to defrost overnight in the refrigerator, then bake as directed.
