OKRA CREOLE
2 doz. young tender okra pods
1 small onion, minced
1 clove of garlic, minced
l/2 sm. green pepper, minced
2 tbsp. butter or bacon drippings
2 fresh tomatoes, coarsely chopped
½ tsp. salt
1/8 tsp. pepper
Cut ends from okra pods. Saute onion, garlic and green pepper in butter for about 6 minutes. Add tomatoes, okra and seasonings; simmer for 10 minutes or until okra is tender. Yield: 6 servings.
