Potato Scramble Cake
Potato Scramble Cake
(The original Czech name would have to be translated as Bride’s Bad Hair Day Cake.)
2 LB potatoes – cooked in the skin
2 LB Apples – 3 or 4 types in the mix is best
1 TBSP Butter – for greasing dish
½ Cup granulated Sugar
3 TSP ground Cinnamon
3 TBSP Butter melted
2 Whole Eggs
½ Cup Milk
Cook, cool and peel potatoes, when cooled grate them on coarse side of grater. Peel and core out the Apples, than slice into thin round slices. Oven proof dish is greased with the butter, than layered with grated potatoes first, than mixture of granulated sugar and cinnamon, a layer of apple slices, granulated sugar and all to be repeated until last layer is apple layer. The last layer is brushed with melted butter and whole thing is covered with mixture of eggs and milk whipped together. Place in to a preheated oven about 375 F and bake approximately 35 to 40 minutes. Serve warm.
