Lemony Blueberry-White Chocolate Cookies
Lemony Blueberry-White Chocolate Cookies
1 1/3 cups flour or white whole wheat flour
1/2 tsp baking soda
1/4 tsp salt
1/3 cup butter, softened
2/3 cup sugar
1 large egg
Zest from half a large lemon (about 1 tsp.)
1 tsp lemon extract
3/4 cup white chocolate chips
3/4 cup sweetened dried blueberries
Preheat the oven to 375 F. In a medium bowl, whisk the flour, baking soda, and salt. In a large bowl, beat together the butter and sugar. Beat in the egg. Add the zest and the lemon extract. Combine until smooth. Stir in the flour mixture until combined. Mix in the chips and the blueberries. Drop by tablespoonfuls onto a large nonstick baking sheet. Bake for 8 to 10 minutes or until just golden around the edges. Transfer to a wire rack to cool. Makes about 24 cookies
