White Chocolate Cookies

1/2 cup butter, softened
1/2 cup shortening
3/4 cup sugar
1/2 cup packed brown sugar
1 egg
2 tsp vanilla
1 3/4 cups flour
1 tsp baking soda
1/2 tsp salt
10 ounces white chocolate, coarsely chopped
1/2 cup coarsely chopped macadamia nuts,
lightly toasted

In a large bowl, cream the butter, shortening, and the sugars until light and fluffy. Beat in the egg. Beat in the vanilla. Combine the flour, soda, and salt. Gradually add to the creamed mixture. Mix well. Stir in the chocolate and the nuts. Cover and chill the dough for 1 hour. Drop by heaping teaspoonsful about 3 inches apart on ungreased baking sheets. Bake at 350 F for 12-14 minutes or until lightly browned. Let stand a few minutes before removing the cookies to a wire rack to cool. Makes about 2 1/2 dozen cookies
