Soft Oatmeal Apricot Cookies
Soft Oatmeal Apricot Cookies
1 cup shortening
1 1/2 cups packed brown sugar
1/3 cup molasses
3 eggs
3 cups quick-cooking oats
2 cups flour
1 tbsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground cloves
1 tsp baking soda
1/2 tsp salt
1 pkg. (6 oz.) dried apricots, chopped
In a bowl, cream the shortening and brown sugar. Beat in the molasses. Add the eggs, one at a time. Beat well after each addition. Combine the remaining ingredients. Stir into the batter. Cover and refrigerate for at least 2 hours. Shape into 1-inch balls. Place 2 inches apart onto greased baking sheets. Bake at 350 F for 10 minutes or until browned.
