Toasted Pecan Shortbread
Toasted Pecan Shortbread
1 cup butter, softened
2/3 cup firmly packed brown sugar
1 tsp vanilla
2 cups flour
1/4 tsp salt
1 cup toasted, chopped pecans
Preheat the oven to 350 F. Lightly grease a 15 x 10 inch baking sheet. In a large bowl, using an electric mixer, cream the butter and the brown sugar until fluffy. Add the vanilla. Gradually add the flour. Stir in the salt and pecans. Press the mixture evenly into the prepared pan. Cut into 2 1/2 x 1 inch bars. Prick with a fork. Bake for 12 to 15 minutes or until the edges are lightly browned. Cool in the pan. Makes 36 bars
