Toasted Coconut Cookies
Toasted Coconut Cookies
1/2 cup butter
1/2 cup shortening
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
2 tsp vanilla
2 cups flour
1 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1 1/2 cups quick-cooking oats
1 1/2 cups flaked coconut, toasted
3/4 cup chopped walnuts, toasted
In a mixing bowl, cream the butter, shortening, and the sugars until fluffy. Add the eggs and the vanilla. Beat well. Combine the flour, baking powder, baking soda, and the salt. Gradually add to the creamed mixture. Fold in the oats, coconut, and the nuts. Drop by tablespoonfuls onto greased baking sheets. Bake at 375 F for 10-11 minutes or until golden brown. Cool for 2-3 minutes before removing to a wire rack to cool completely.
