Vanishing Oatmeal Raisin Cookies

1 cup (2 sticks) margarine or
butter, softened
1 cup firmly packed brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt (optional)
3 cups quick or old fashioned
oats, uncooked
1 cup raisins

Heat the oven to 350 F. Beat together the margarine or butter and both of the sugars until creamy. Add the eggs and vanilla. Beat well. Add the flour, baking soda, cinnamon, and salt. Mix well. Stir in the oats and raisins. Mix well. Drop by rounded tablespoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool for 1 minute on the cookie sheets. Remove to wire racks to cool completely.
Makes about 4 dozen
