Oatmeal Chocolate Raisin Cookies

1 1/4 cups flour
1 tsp baking soda
3/4 tsp ground cinnamon
1/2 tsp salt
3/4 cup (1 1/2 sticks) unsalted
butter, softened
2/3 cup sugar
2/3 cup packed light-brown sugar
2 eggs
1 tsp vanilla
2 1/4 cups old-fashioned rolled oats
1 cup dark-chocolate- covered raisins,
coarsely chopped

Heat the oven to 375 F. Whisk together the flour, baking soda, cinnamon, and salt. Set aside. Beat the butter and the sugars until smooth. Beat in the eggs and vanilla. On low speed, beat in the flour mixture until blended. Stir in the oats and the chocolate-covered raisins. Drop by well-rounded tablespoonfuls onto nonstick ungreased baking sheets, about 2 inches apart. Bake at 375 F for about 11 to 13 minutes or until lightly browned around the edges. Cool on the baking sheets for 2 minutes. Remove the cookies to wire racks. Cool completely. Makes 36 cookies
