Butter Pecan Roll-Ups
Butter Pecan Roll-Ups
6 tbsp butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1/2 tsp vanilla
6 tbsp flour
1/8 tsp salt
1 cup ground pecans
In a small bowl, cream the butter and both of the sugars until light and fluffy. Beat in the egg and vanilla. Combine the flour and salt. Gradually add to the creamed mixture. Mix well. Stir in the pecans. Drop two tablespoonfuls onto a well greased baking sheet. Bake at 400 F for 4-5 minutes or until the edges begin to brown. Cool for 1 minute. Loosen each cookie and then curl the cookie around a wooden spoon handle. Cool on a wire rack. Repeat with the remaining dough. Makes about 6 dozen
