Apple-walnut streusel pie
Apple-walnut streusel pie.
Filling
4 lbs mixed granny smith, golden delicious,or Empire apples (8 or 9)
1/2 cups chopped walnuts
1/2 cup brown sugar
1/4 cup white sugar (divided)
2 Tablespoons flour
1 tablespoon lemon juice
3/4 teaspoons cinnamon
2 Tablespoons milk
Topping
4 Tablespoons each of
unsalted butter, softened
brown sugar
flour
1/2 cup broken walnuts
Everyone has a different way of making pie crusts, so make your own you'll need a piece rolled out to 15 inches in diameter about 1/8 inch thick. slide a 10 inch x 2 inch deep cast iron skillet under the crust and center it. Gently press the dough against the skillet all around the inside so the skillet is lined. do NOT trim crust.
make the filling
Peel, core, and cut apples into about 1/2" wedges. toss in a mixing bowl with the rest of the stuff and toss it about so the apples are well coated with flour, sugar( hold back 1 tablespoon), and cinnamon. pour all the filling into the skillet. fold the overhanging dough in towards the center of the pie. you should have a nice sized hole in the center. Bake in a 350° F oven for 1 hour. Make topping.
I use a pastry blender to mix the butter, sugar and flour. Then add the walnuts and stir it up.
after an hour (pie won't be done yet) remove the pie from the oven and pack the hole in the center with the topping. Place back in the oven for another 30 minutes. Remove from oven and smear top crust with butter while it's hot, then sprinkle with the held back sugar. HIDE THE PIE
