Walnut Oat Brownies

6 squares (1 ounce each) semisweet chocolate
1/4 cup butter
1/2 cup egg substitute
1/4 cup packed brown sugar
2 tbsp sugar
1 tsp vanilla
1/3 cup quick cooking oats
1/3 cup nonfat dry milk powder
1/4 cup toasted wheat germ
1/2 tsp baking powder
1/4 tsp salt
1/4 cup chopped walnuts
Confectioners' sugar, optional

In a microwave, melt the chocolate and the butter in a microwave-safe bowl. Stir until smooth. Cool slightly. In a large bowl, beat the egg substitute and the sugars. Stir in the vanilla and the chocolate mixture. Combine the dry ingredients. Gradually add to the chocolate mixture. Stir in the walnuts. Pour into an 8-inch square baking dish coated with cooking spray. Bake at 350 F for 25-30 minutes or until a toothpick inserted into the center comes out clean. Cool on a wire rack. Dust with confectioners' sugar, if desired.
Makes 12 brownies
