Amish Orange Rolls Empty Amish Orange Rolls

Amish Orange Rolls

1 cup shortening
2/3 cups sugar
1 tbsp salt
2 cups milk, scalded
3 tbsp active dry yeast
1 cup warm water
1/2 cup orange juice
4 tbsp orange zest
4 eggs, beaten
11 to 14 cups flour

Cream together the shortening, sugar, salt, and milk. Set aside to cool. Dissolve the yeast in warm water. Stir into the cooled milk mixture. Add the orange juice, orange zest, eggs, and yeast mixture. Using a heavy duty mixer or by hand, stir in 8 cups of flour. Place on a lightly floured board and knead in enough flour until the dough is smooth and elastic. Place in a grease bowl, turn the dough to coat, and let rise until double in size. Roll out to 3/4 inch thick. Cut with a biscuit cutter. Place in oiled 13 x 9 inch baking pans or cookie sheets, about one inch apart. Let rise again until double. Bake at 325 F for 20 to 25 minutes. Cool before icing.

Orange Icing

4 tbsp orange juice
1 tbsp orange zest
3 cups powdered sugar

Combine all the ingredients well and drizzle over the warm orange rolls.
