Finnish Butter Cookies
Finnish Butter Cookies
3/4 cup butter, softened
1/4 cup sugar
1 tsp almond extract
2 cups flour
1 egg white
2 tbsp sugar
1/3 cup finely chopped almonds
In a small bowl, cream butter and sugar until light and fluffy. Beat in the extract. Gradually add the 1 1/4 cups flour. Knead in the remaining flour. Cover and chill for at least 2 hours. On a lightly floured surface, roll out the dough to 1/4 inch thickness. Cut with a 1 1/2 to 2 inch cookie cutter. Place on an ungreased baking sheets. Beat the egg white until foamy. Brush over the cutouts. Sprinkle with the sugar and the almonds. Bake at 350 F for 7-8 minutes or until the edges begin to brown. Cool on the wire racks.
