Almond Butter Cookies
Almond Butter Cookies
1/2 cup butter, softened (Do Not Substitute)
1/2 cup shortening
6 ounces almond paste
1 1/3 cups sugar
1 egg
2 cups flour
1 tsp baking soda
In a mixing bowl, cream the butter, shortening, almond pasta, and sugar. Beat in the egg. Combine the flour and the baking soda. Gradually add to the creamed mixture. Roll into 1/4 inch balls. Place 2 inches apart on ungreased baking sheets. Bake at 400 F for 8-10 minutes or until lightly browned. Remove to wire racks to cool.
Makes 6 1/2 dozen cookies
