Creamy Garlic Salad Dressing

This is a super easy salad dressing I found it in Everyday Food. It's surprisingly creamy given that there's no cream, buttermilk, or mayonnaise in it. I highly recommend it. It's easily doubled or tripled as well.
Makes about 3/8 cup

Ingredients:
3 tablespoons olive oil
1 tablespoon white wine vinegar (white vinegar is fine)
1 tablespoon Dijon mustard
1 garlic clove
Pepper to taste
fresh herbs (optional)

Method:
Mix all ingredients and stir or shake vigorously
