Rebekka's bean cakes
1/2 lb cooked beans or black eyed peas
1 c corn meal
1 c flour
2 tsp salt
1 tsp baking powder
1/8 tsp pepper
1 c milk
2 eggs well beaten
cooking oil
Mix all but cooking oil. Coat a cast iron skillet with the oil. Place in oven to heat at 350. When skillet is hot pour cake into pan. Bake 45 minuets or until golden brown. slice and serve like cornbread.
I use both self rising cornmeal and flour in this but one of the other works to give it the lift it needs. Any type of bean. We used white beans and black eyed peas.
