Vegee Cakes
Vegee Cake
10 PCS Cherry Tomatoes
1 Small Egg Plant
½ of each of Coloured Bell Peppers
2 Small Zucchini
1 Medium Onion
1 Clove of Garlic
2 TBSP Chopped Flat Leaf Parsley
2 TBSP Olive oil
1/3 Cup of Grated Cheese – hard type

4 Eggs
2 Cups of Milk
9 TBSP All purpose flour
salt/pepper

Zucchini, Egg plant, Bell Peppers and Tomatoes are cut into a chunk bites.
Onion and Garlic are chopped very fine.
In large skillet 2 TBSP of oil are heated and onion with garlic is sweated, than rest of the prepared/chopped vegetables (except Parsley) are added and sautéed to al dente. Than season with salt and pepper and let cool down. Baking dish with sides is lined with parchment paper and all prepared vegetables are spread on to the paper and topped with chopped parsley.
Meanwhile the batter is prepared – Eggs are separated to Yolks and Whites. The Yolks are mixed/whipped with salt, milk and flour into a pancake style dough. Whites are whipped into a peak moraine and than gently added to the above mixture.
The whole mixture is poured over prepared vegetables, topped with grated hard cheese and baked in preheated oven (375 - 400 F) for about 20 minutes
