Apricot Banana Bars
Apricot Banana Bars
3/4 cup brown sugar
1/2 cup butter, softened
1 cup apricot preserves
1 tsp. vanilla
2 eggs
2 cups flour
3/4 cup mashed bananas (about 2)
1/2 cup chopped walnuts
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/3 cup sugar
1/2 tsp. cinnamon
Preheat oven to 350 degrees. Grease and flour a 15x10" jelly roll pan. In large bowl, combine brown sugar and butter. Cream together until well blended. Add preserves, vanilla and eggs and blend well. Add remaining ingredients except sugar and cinnamon and mix until blended. Combine sugar and cinnamon in small bowl.
Spread into prepared pan and sprinkle with cinamon sugar; bake at 350 degrees for 25-30 minutes or until golden brown and top springs back when lightly touched in center. Cool and cut into bars.
