Apple Loaf Empty Apple Loaf

Apple Loaf

1/2 cup butter or butter flavored crisco
1 cup white sugar
2 eggs
1 teaspoon maple extract
1 packed cup coarsely shredded apple
2 cups AP flour
1 teaspoon baking powder
1/2 teaspoon soda
1/2 teaspoon salt
1/2 cup chopped walnuts or pecans (optional)

Cream butter, sugar and 1 egg, beat till smooth. Add second egg and maple extract. Stir in the shredded apple.
Whisk together flour, baking powder, soda, salt and nuts if you use them in a separate bowl. Pour into batter and stir only till mixed. Place into a 9 X 5 x 3 inch greased loaf pan. Bake in 350 ยบ oven for almost a hour..depends on your oven. Make sure that a cake tester comes out clean.
Let stand in pan for 10 minutes , then turn out on a rack to cool. Wrap and enjoy. I usually drizzle with a maple or vanilla glaze to make it a bit fancier for company .
