Black- Bottom Banana Bars

1/2 cup butter, softened
1 cup sugar
1 egg
1 tsp vanilla
1 1/2 cups mashed ripe
bananas (about 3 medium)
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/4 cup baking cocoa

In a large bowl, cream the butter and sugar until light and fluffy. Beat the egg and vanilla. Stir in the bananas. Combine the flour, baking powder, baking soda, and salt. Add to the creamed mixture. Mix well. Divide the batter in half. Add the cocoa to half. Spread into a greased 13 x 9 inch baking pan. Spoon the remaining batter on top and swirl with a knife. Bake at 350 F for 25 minutes or until a toothpick inserted near the center comes out clean.. Cool on a wire rack. Makes 2 1/2 to 3 dozen
