Zucchini Patties
Ingredients
•2 medium zucchini (grated)
•20 Ritz crackers (crushed)
•1 egg
•1/4 C. chopped onion
•1/4 C. chopped green pepper
•1 tsp. grated Parmesan cheese
•1/4 tsp. salt
•1/8 tsp. pepper
Directions
Mix all ingredients together in a bowl. Form into about 6 patties. Fry in butter until golden brown.
