.Stuffed Green Pepper Soup
2 lbs. ground beef
2 qts. water
1 (28 oz.) can diced tomatoes, undrained
1 (29 oz.) can tomato sauce
2 c. cooked long-grain rice = 1/2 c. uncooked
2 c. chopped green bell peppers, about 2 large peppers
2 beef bouillon cubes
2 tbl. packed brown sugar
2 tsp. salt
1 tsp. pepper

In 6 qt. saucepan or Dutch oven, brown beef and drain. Add remaining ingredients and bring to a boil. Reduce heat; cover and simmer for 30 - 40 minutes or until tender. This can also be cooked in the crock pot. Makes about 16 servings. I add the rice in dry as the soup simmers for quite a while. The rice will be cooked!
