Split Seconds

2/3 cup sugar
3/4 cup butter or margarine, softened
2 tsp vanilla
1 egg
2 cups flour
1/2 tsp baking powder
1/2 cup red jelly or preserves

Heat oven to 350 F. In a large bowl, beat the sugar and butter with an electric mixer on medium speed until light and fluffy. Add the vanilla and egg. Beat well. Add the flour and baking powder. Stir well. Divide the dough into 4 equal parts. On a lightly floured surface, shape each part into a 12 inch roll. Place on an ungreased cookie sheets. Using the handle of a wooden spoon or finger, make a depression about 1/2 inch wide and 1/4 inch deep lengthwise down the center of each roll. Fill each roll with 2 tablespoons of the jelly. Bake for 15 to 20 minutes or until light golden brown. Cool slightly. Cut each baked roll diagonally into 12 cookies. Cool on cooling racks. Makes 4 dozen cookies
