Spanish Bar Spice Cake
Spanish Bar Spice Cake
2 C flour
1½ C sugar
1½ tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
1 tsp. nutmeg
1 tsp. allspice
1 tbsp. cocoa (Dutch process)
Add:
1/2 C oil
2 C applesauce
2 eggs
3/4 C raisins
Mix 1st 8 ingredients well w/mixer. Add next 3 ingredients (raisins last.) Bake @350 in
greased/floured 9x13 inch pan for 30-35 minutes (tube pan 40-45 minutes.)
Frosting:
Beat until smooth and creamy:
1/3 C shortening
3 C powdered sugar
3 tbls milk or cream
1½ tsp vanilla
