Fresh Fruit Cobbler
Fresh Fruit Cobbler
5 to 6 cups chopped fruit
(apples, rhubarb, blueberries, or peaches)
2 cups flour
1/2 cup sugar
4 tsp baking powder
1 tsp salt
1/2 cup cold butter
1 cup milk
Topping:
2/3 cup sugar
1/4 cup cornstarch
1 1/2 cups boiling water
Arrange the chopped fruit evenly in the bottom of a 13 x 9 inch greased baking pan. In a bowl, combine the flour, sugar, baking powder, and salt. Cut in the butter until crumbly. Stir in the milk. Spoon over the fruit. Combine the sugar and the cornstarch. Sprinkle over the batter. Pour water over all. Bake at 350 F for 40-45 minutes or until the fruit is tender. Makes 12-16 servings
