Caramel Apple Salad
6 Apples, cored & cut in bite sized pieces
1 - 8 oz. can crushed unsweetened pineapple in own juice [do not drain juice]
1 - Box sugar free Butterscotch Pudding Mix, unprepared
1/2 to 1 cup miniature marshmallows [see note]
1 cup chopped peanuts - optional
1 - 8 oz. container fat free whipped topping

In large bowl, mix the first five ingredients together, stir well.
Gently fold in the whipped topping, transfer to serving bowl, chill. Keeps well in sealed container.

NOTES - Makes a large amount can cut in half [to cut pudding mix in half measure the whole amount by teaspoons and save half for another salad.]
It takes 11 mini marshmallows to equal 1 regular marshmallow, the amount of marshmallows can be reduced if one wants NO SUGAR at all.
