Hot sauce recipe


One sink well full of tomatoes
1/4 c salt
1/4 cup vinegar
1/4 cup sugar
3 Table spoon chopped garlic
1 large red onion
3 small jalapenos
3 cheyenne
hand full of small red chiles

Core tomatoes liquify in blender ...strain seeds and skins as if you were going to make tomato juice or sauce.
Use large (5 gallon) stock pot for juice ..heat to simmer.
Remove stem ends from peppers
Dice onion
Place peppers onion & garlic in blender add 2-3 cups of hot tomato sauce and liquify. Pour this mixture along with other remaining ingredients back into stock pot simmer until you have desired consistancy. Pour into pint jars and seal by hot water bath method for 35 min.

You can also use this with green tomatoes and the same hot peppers when they are still green.This sauce is a bit sweeter and it will be green.If you want it hotter you can just add more of your favorite hot pepper.

For those who may have an over ubundance of cherry tomatoes like I did last year, this is great because they do not even have to be cored just drop in the blender and liquify.
