Pumpkin-Coconut Bars
Pumpkin-Coconut Bars
2 cups Bisquick baking mix
1 cup chopped pecans
1 cup flaked coconut
2/3 cup sugar
1 1/2 tsp ground cinnamon
1 1/2 tsp. ground nutmeg
3 eggs
1 can (16 oz) pumpkin
Easy Coconut Frosting (below)
Directions:
Heat the oven to 325 degrees F.
Grease a jelly roll pan.
Mix all the ingredients, except the frosting; beat for 40 strokes.
Spread in a pan.
Bake until a wooden pick inserted into the center comes out clean,
for about 20 minutes; cool completely.
Spread Easy Coconut Frosting over the top.
Cut into bars, about 2 1-3/4 bars.

Ingredients:
1 cup of powdered sugar
1 tbsp. plus 2 tsp. of milk
1/2 tsp. coconut flavoring
Directions:
Mix the powdered sugar, milk and coconut flavoring until smooth.
