Taco-Flavored Cheese Cookies

1 cup butter, softened
2 cups grated sharp Cheddar cheese
2 cups grated Monterey Jack cheese
3 cups flour
1 tsp ground cumin
1 tsp chili powder
1 tsp ground black pepper
1/2 tsp salt

Preheat the oven to 350 F. Line the baking sheets with parchment paper. In a large bowl, beat the butter and both of the cheeses at medium speed with an electric mixer until creamy. In a medium bowl, combine the flour, cumin, chili powder, pepper, and the salt. Gradually add to the butter mixture. Beat until smooth. Roll the dough into 1-inch balls. Place 2 inches apart onto the prepared baking sheets. Flatten the cookies slightly with the bottom of a glass. Bake for 10 to 12 minutes or until the edges are lightly browned. Let cool on the pans for 2 minutes. Remove from the pans. Cool completely on wire racks. Store in airtight containers. Makes about 7 dozen
