Holiday Shortbread
Holiday Shortbread
2 cups butter, softened
1 cup sugar
1 tsp vanilla
4 cups flour
Colored sugar, optional
In a large bowl, cream the butter and sugar. Add the vanilla. Mix well. Gradually add the flour. Mix until the dough forms a ball. On a lightly floured surface, roll the dough to 1/2 inch thickness. Cut into 1 1/2 inch squares, diamonds, and/or triangles. Place on ungreased baking sheets. Sprinkle with colored sugar if desired.. Bake at 325 F for 14-18 minutes or until the edges are lightly browned. Cool on wire racks.
Makes about 3 1/2 dozen cookies
