Cherry-Chocolate Chip Cookies

1 cup butter, softened
1 cup granulated sugar
1 cup packed brown sugar
1 tsp baking soda
1 tsp salt
2 eggs
1 1/2 tsp vanilla
3 cups flour
1 - 12 oz. pkg. semisweet chocolate
pieces (2 cups)
1 cup snipped dried cherries

Preheat the oven to 375 F. In a large mixing bowl, beat the butter with an electric mixer on medium to high speed for 30 seconds. Add the granulated sugar, brown sugar, baking soda, and salt. Beat until combined. Scrape the bowl occasionally. Beat in the eggs and vanilla until combined. Beat in as much of the flour as you can using the mixer. Stir in any of the remaining flour by hand. Stir in the chocolate chips and the dried cherries. Drop the dough by tablespoonfuls 2 inches apart onto ungreased cookie sheets. Bake about 9 minutes or until the edges are light brown. Transfer to wire racks.
Makes about 48 cookies
